A very Thai adaptation: Mango sticky rice tart

For anyone who’s been to Thailand, the popularity of mango with sweet sticky rice is undisputed. Loved by foreigners, loved by locals, it’s the best way to enjoy the mango season…until this was discovered. Using classical french baking techniques learnt at Le Cordon Bleu, my mother made this crusty sweet pastry tart filled with layers of sticky rice, mango pasty cream, topped with mango mousse with chunks of fresh mango. Fusion food for the win!
